Ingredients
1/3 c Soy sauce
2 tb Lime juice
8 oz Fresh mushrooms,
cleaned and sliced
1 1/2 tb Cornstarch
1/2 lb Fresh snow peas
1 lb Boneless chicken breast or thigh meat,cut into
bite-size pieces
3 c Cooked rice
2 tb Water

Combine soy sauce, lime juice, water and cornstarch
in a 2 qt. round
casserole. Stir chicken and mushrooms into soy sauce mixture.
Cover and
stirring midway through cooking, microwave on high 7 to 8 minutes.
Add snow
peas, cover and microwave on high 2 minutes or until snow peas
are tender
crisp. Serve over a bed of fluffy rice, garnishing with lime
wedges or
slices of lime.
Makes 4 servings.
