Ingredients
1 lb Boned chicken or turkey
-breasts,cut into strips
1 c Sliced mushrooms
1/4 c Chopped onion
2 tb Oil
10 3/4 oz Can condensed cream of mushroom soup
1/4 c Grated Parmesan cheese
1/4 c Water
2 tb Dry sherry wine
1/2 c Sliced red or green bell-pepper
1 Bag Minute Rice Boil in Bag-rice,cooked

Cook and stir chicken and onion in hot oil in
a skillet until chicken is
lightly browned and onion is tender. Stir in soup, water and
wine. Add
mushrooms, peppers and cheese. Bring to a boil. Reduce heat;
cover and
simmer 10 minutes, stirring occasionally. Serve over rice. Top
with
additional cheese, if desired.
